Baking Cupcakes for the Family

This weekend my mom, sister and nephew came to visit and we had a blast! I truly enjoyed every second they were here including all the time I spent making alot of food!!My sister played as supervisor while Matthew and I made some super awesome cupcakes! Mine and Matthew's birthdays are coming up soon so it was an excuse to make these delicous delights!!! I got this awesome recipe off Pinterest, hope you make these and enjoy!

 Cherry Coke Float Cupcakes adapted from Nigella Lawson's 'How to be a Domestic Goddess'
makes 12 cupcakes


Cupcakes
1 1/2 Cups flour
3/4 Cup sugar
1/2 tsp baking soda
1/4 tsp salt
1 large egg
1/2 Cup buttermilk
2 tsp vanilla
1/2 cup unsalted butter
3 Tbs cocoa powder
3/4 Cup Coca-Cola
1/4 cup marachino cherry syrup
24 marachino cherries

Cola Icing
1 cup Icing sugar
2 tbsp cola

Preheat the oven to 350 F.In a bowl, combine the flour, sugar, baking soda, and salt. Beat the egg, buttermilk, and vanilla in a second bowl. In a saucepan, boil the Coca-Cola, and cherry syrup gently for five minutes. Melt in the butter and cocoa powder. Pour into the dry ingredients, stir well with a wooden spoon, and then add the liquid ingredients, beating until everything is blended.
Pour into the cupcake pans and push a cherry into the center of each cupcake. Bake for 15 minutes or until a cake tester comes out clean.
When cool drizzle over the Cola Icing and let dry. Top with cherry buttercream and a cherry



Buttercream Frosting

Ingredients:
1 pound confectioners sugar
1/2 cup butter, softened
1 teaspoon vanilla extract
3 tablespoons milk**food coloring, optional

Directions:
In large bowl, beat together sugar, butter, vanilla and milk until smooth. If necessary, add more milk until frosting is spreading consistency. Add a few drops of food coloring if you wish. Stir to blend.

Little Things make the world go round!

Sometimes I wonder in a age of technology and immediate gratification if we have forgotten all the little things that make the world a better place, a magical place, a place of wonder and growth? I realized this when I had children and began looking at things from their perspective . All things I had taken for granted became new again rain, frost, butterflies,cooking,little gestures to say I love you!!I realized it is the little things that make up our life and we should pay more attention to them instead of focusing on the next holiday, next big purchase or even the next vacation, while these things are wonderful they only make up a small portion of our life. In my blog I will be posting about my little ones and our little moments that make our life special, I hope you will enjoy it =)

P.S. My boys have begun learning to cook so we are gonna try to do a weekly recipe =)
